Recipe: Umngqusho

Yield: 1 Servings

      2 c  Dried sugar beans, soaked
           -- overnight
      2 c  Samp,*Note, soaked overnight
    500 g  Shin bones
      1    Onion, chopped
      1    Green pepper, chopped
      2    Tomatoes, chopped
           Salt and pepper

1/2 c Butter milk

Note* If you don't know samp, it is dried whole white corn (Mielies).

Cook the beans and samp in salted water in a large pot.

Brown the meat and the onions, add the salt pepper and a little water to cover. Simmer for 1 - 2 hours until almost done. Add the tomatoes and green pepper and simmer until the meat is tender.

Mix together with the samp and add buttermilk. Heat the dish and serve
