Recipe: Quick Chicken Chili

1 tb Vegetable oil
1 1/2 lb Boneless skinless chicken
-- breast halves; cut into 1
-- inch cubes
1/2 c Red or green bell pepper;
-- chopped
1 lb Chicken stock
1/4 lb Green chilies; chopped
1 1/4 lb White kidney beans; rinsed
-- and drained
1 oz Chili seasoning

Heat oil in a heavy nonstick skillet over medium high heat. Sauté chicken 3-5 minutes, or until lightly browned. Add remaining ingredients and bring to a boil. Reduce heat to low and simmer 20 minutes.
