Recipe: Quick Calves Liver with Avocado And Sage

Yield: 1 servings

      6    Thin slices calves liver
      1    Just ripe avocado
      1    Lime; juice of
     30 g  Unsalted butter; (1oz)
           A swirl of olive oil
      1    Handful fresh sage leaves
      2 tb Madeira; (2 to 3)

Peel and slice the avocado. Sprinkle with a little of the lime juice. (Save the rest for the pan juices)

Heat a heavy cast pan until evenly hot. Add butter and oil and heat until bubbling. Season liver slices and add to pan. Cook for just less than a minute each side. Keep warm. Add avocado and sage and heat through - 30 seconds. Keep hot with liver.

Add Maderia and lime juice and scrape up pan juices into liquor.

Serve immediately with avocado slices tucked in and around the liver and topped with sage and pan juices.
