Recipe: Quark And Fruit Strudel

Yield: 6 servings

375 g Cooking apples; peeled,

           -- cored and
           -- grated (12oz)
    125 g  Mature Cheddar cheese;
           -- grated (4oz)
    100 g  Quark; (3 1/2 oz)
     75 g  Caster sugar; (3oz)
    125 g  Sultanas; (4oz)
      2 ts Mixed spice
     50 g  Fresh white breadcrumbs;
           -- (2oz)
      6    Sheets filo pastry; (6 to 8)
     40 g  Butter; melted (1 1/2 oz)
      1 tb Icing sugar; sifted
  1. Place the apples, cheese, Quark, sugar, sultanas, spice and breadcrumbs in a bowl and mix together.
  2. Brush a sheet of filo pastry with melted butter. Place a second sheet on top, half overlapping the first sheet, to form a square, and brush with melted butter. Repeat until all the filo pastry is used up.
  3. Spoon the apple and cheese mixture along one end of the pastry square, leaving a 2 cm (1 inch) border. Carefully roll up the strudel and transfer to a lightly greased baking tray.
  4. Brush the strudel with the remaining butter and bake in a preheated oven 180 C, 350 F, Gas Mark 4 for 35-40 minutes or until golden.
  5. Dredge with icing sugar and serve hot or cold.
