Recipe: Key Lime Pie

Yield: 8 Servings
1 1/2 c Graham cracker crumbs
2 tb Sugar
4 tb Margarine; melted

1 1/2 c Sugar
1/3 c Cornstarch
1/4 ts Salt
4 Eggs
2/3 c Key lime juice
1 ts Grated lime rind
2 tb Margarine
In a med. bowl combine graham cracker crumbs, 2 tablespoons of sugar and 4 tablespoon melted margarine. Press into bottom and sides of a greased 9" pie pan. Chill for 15 mins. Meanwhile in a med. saucepan, stir in reaining sugar, cornstarch and salt. Whisk in eggs and 1 cup of water. Over med-low heat, bring to a boil 1 min., stirring constantly or until mixture thickens. Remove from heat and stir in juice, peel and remaining margarine. Pour into prepared pie shell. Refrigerate 2 hours or until firm. Garnish with whipped cream if desired.
