Recipe: Irish Soda Bread Mix with Recipe

2 1/2 c Flour
1/2 c Whole wheat flour

      1 c  Dried currants
      1 c  Light brown sugar
      1 tb Baking powder
      1 ts Baking powder
           -- SODA BREAD:
      1 pk Bread mix
    1/4 c  Butter, softened
      2    Eggs

1 1/2 c Buttermilk

Mix: Combine all ingredients and store in an airtight container.

Irish Soda Bread: Preheat oven to 350. Grease and flour a 9" springform pan. Cut butter into mix. Add eggs and buttermilk, stir until smooth. Pour into pan and bake 45 minutes or until a toothpick inserted in center comes out clean. Serve warm.
