Recipe: Egg Fried Rice

Yield: 6 Servings
1 c Egg beaters; (r) 99% egg

4 1/2 c Cold cooked rice
1 c Frozen green peas; thawed
3/4 ts Salt
1/4 ts Black pepper
2 c Fresh bean sprouts
1 c Chopped onion
Soy sauce; to taste
Lightly spray a large nonstick skillet or wok with cooking spray and heat over medium-high heat. Add egg mixture; stir-fry 2 minutes. Add rice; stir-fry 3 minutes. Add green peas, salt, and pepper; stir-fry 5 minutes. Add bean sprouts and onions; stir-fry 2 minutes. Serve immediately. Yield: 6 Servings (serving size: 1 cup).
